Garlicky Zucchini Soup
Implementing a new, restrictive meal plan can be fun! It’s a time for new recipes, new combinations of limited ingredients, and most excitingly, health benefits. I’m in the process of getting creative with an even more limited plan than I usually try to keep, and most “healthy” recipes I’ve found still have at least a few ingredients that are currently off-limits for me. This blender soup was born out of a search for quick, easy meals to take on the go, to ensure I can stick to my plan during the busy work week! It also gets some steamed veggies into my diet. (I am not generally a fan of that preparation method) It’s super easy, and gluten free, dairy free, grain free, nightshade free, egg free… basically all of the “frees” that I need, but certainly not flavor free! Give it a try and tell me what you think!
Ingredients
- 3 medium zucchini, chopped into 3 pieces each
- 1 white onion, chopped into six pieces
- 3 garlic cloves
- 2 Tbsp olive oil
- sea salt to taste
Steam zucchini and onion together until softened, about 10 minutes. Transfer to blender, add garlic, olive oil and sea salt. Blend/puree until smooth. Serve immediately for maximum nutrition benefits, or store for a quick on-the-go meal. Makes about 3 1/2 cups of soup.
